Dinner With Jack – ‘Bad Ass Pork Chops & Kick Ass Sauce’ Recipe

As many of you know, I have moved my home to Kennebunk, splitting a duplex with Erin’s parents. Jack, Erin’s father, is a big fan of cooking. Luckily he’s really good at it, and even luckier – I live next door. For the last month Jack has been feeding us dinner almost every night. Tonight I was so blown away by the food that I decided I have to tell someone else about it. Lucky you!

So here’s the first entry in the “Dinner With Jack” series. I am sure there will be many.

“Bad Ass Pork Chops & Kick Ass Sauce”

Edible ecstasy that would tempt pigs to eat their kin, this plate smells how I imagine an angel smells – that is to say of garlic and butter and meat. Here’s how he made it. Recipe by Jack Donovan

Your chef will require:

  • 1 Can Cream of mushroom soup
  • 1 Pint Sour Cream
  • Salt
  • Pepper
  • Paprika
  • Parsley
  • Onion Powder
  • 8 fat, juicy pork chops
  • 1 large onion
  • Butter

The Kick Ass Sauce

  1. Chop up your onion into big chunks
  2. Brown onions in butter in a saucepan (or tin can).
  3. Bust open a can of cream of mushroom soup. Pour it into the onion saucepan.
  4. Ditto with the sour cream
  5. Put pan to flame till it boils.

The Bad Ass Pork Chops

You Shalt Do The Following With Your Meat

  1. Go to your oven. Preheat that bad boy to 350.
  2. Season pork chops (both sides!) with copious amounts of the ab0ve listed spices. Season to taste…
  3. Lightly (olive) oil a casserole pan or whatever you have big enough to hold all that stuff.
  4. Pour the ‘Kick Ass Sauce’ over the meat.
  5. Shove into the oven and forget about it for 2 hours. Yeah, I said 2 hours. BE PATIENT. The meat will and MUST fall off the bone. If it doesn’t, throw it all away and start from scratch.
